The seed is crushed at low temperature in a traditional ghani. No solvent, no deodorising, no bleaching earth — the four steps that quietly remove everything mustard oil is known for.

That sharp catch at the back of the throat is allyl isothiocyanate, and it only survives if the oil is never overheated. It is also the reason a Bengali fish curry or a Punjabi sarson tastes like itself.

Because it has not been refined. Cold pressing in a kachi ghani keeps the compounds that create the jhaans — the sharpness you feel at the back of the throat. Refined mustard oils are deliberately deodorised to remove it. If the oil in your kitchen has no bite, it has been processed.
You do not have to, but many households smoke it lightly out of habit. Bhumisha is unrefined and safe to use straight from the bottle. Heating it to smoking point only softens the pungency — it does not make it any purer.

Every bottle carries a batch number, manufacturing date and best-before printed on the back, along with our FSSAI licence 12726057000063. We press only our own graded sarson, so there is no point in the chain where another oil could be blended in. A simple check at home — refrigerate a little; pure mustard oil thickens uniformly rather than separating into layers.
In a cool, dry place away from direct sunlight, with the cap closed. The glass bottle protects it well. Unrefined oil keeps its aroma best when it is not left standing next to the stove.
